You can use 1 beef bouillon cube mixed with 1 tablespoon of dried onion flakes to make an inexpensive substitute for the dry onion soup mix that is called for in many recipes and Did you know frozen or whole kernel corn has a fresh summertime flavor when milk is substituted for cooking water and a teaspoon of sugar is added? Or that you can when mashing potatoes use milk and a few drops of imitation butter flavoring to give the buttery flavor without the extra calories.

 

You can use the leftover juice from canned fruit as a base for powdered drinks like Kool-Aid, just add more or less sugar depending on how much sugar is in the fruit juice.  Do you have homemade sweet pickles at home, next time you finish a jar don’t pour out the leftover juice, cut up an onion and green pepper and let those marinate for a couple days, makes a great snack or a good salad dressing and instead of throwing away those stale potato chips try putting them on a cookie sheet in a 200 degree oven for about 30 minutes and you’ll have fresh chips.

 

Do you hate soggy reheated pizza?  Heat up your leftover pizza in a nonstick skillet on top of the stove on med-low heat until warm; it will keep your crust crispy.  When reheating biscuits, pancakes or muffins that were refrigerated, place them in the microwave with a cup of water, this will keep them moist, When you buy a container of cake frosting whip it with your mixer for a few minutes, you can double it in size so you can frost more and you get less calories and sugar per serving.

Time saving tip for Tomatoes.  Did you know that you don’t have to spend all that time boiling and canning your tomatoes? You can simply freeze them whole.  All you need to do is clean and de-stem the tomatoes and put them in freezer bags whole.  When you are ready to use them, simply take them out of the freezer, defrost them in the microwave and the skin will come right off.  Then you can either puree them in a blender or dice them up and they are ready for your tomato recipe.

 

Choose the perfect wine to serve with your dinner.  Chardonnay is a dry white wine that goes well with chicken, seafood and fish, (Ca-burr-nay So-veen-yawn) is the classic wine to serve with red meats, it is a full bodied red wine.  Another red wine also great with beef is Syrah (Sah-ra) also called shiraz. This is the wine to choose if you are serving wild game or duck as well.  Pick up a bottle of pinot grigio if you are serving seafood or salmon.  If you are serving steaks or a tomato based recipe pair them with a zinfandel.

Do you know that simmering our Oktoberfest brats actually tenderizes the bratwurst skins? Try this recipe for your family and friends. Grill bratwurst over medium heat, turning occasionally for about 20 minutes.  Combine 1 cup beer, 1 and ½ cups water and 1 cup of ketchup in a large saucepan.  Simmer the grilled brats in the beer mixture for 15-30 minutes for added flavor and tenderizing.  Another great take on our bratwurst is to create a Philly brat, simply grill your brats, sauté yellow, red and green peppers along with a large onion in olive oil until tender and simply place a brat in a fresh baked club roll, top with peppers and onions and a cheese sauce of your choice. There you have it, 2 great ways to make brats even better.

 

A few great tips for the holidays for you to give a try.  For an extra moist and colorful stuffing, add 1 diced unpeeled apple to your favorite recipe, For extra rich tasting homemade cranberry sauce, add a teaspoon or more of vanilla extract after cooking, Did you know fresh cranberries are easier to grind in a food processor if you freeze them first, just ground berries to drain well before using and if you add a cup of whole cranberries to your favorite apple pie recipe you get a rosy red color and a delightful sweet-tart taste.

 

Facts to help you with your turkey dinner, A great way to roast a turkey is in a shallow pan with a tent of aluminum foil over it, just roast at 325 degrees for 15-20 minutes per pound, for a moister white meat, turn our turkey on its breast when roasting, or to avoid the last minute rush just roast the turkey the day before, carve it and store the meat and stuffing separately in the refrigerator. Here’s A quick casserole you can make from you holiday leftovers, Layer turkey, add gravy, then leftover mashed potatoes add a layer of cranberries them more mashed potatoes. Dot with butter, top with chopped onion and shredded cheese and Bake until heated thru.

 

I am going to share a personal recipe everyone is sure to enjoy.  For anyone who likes pumpkin pie they are going to LOVE this Pumpkin pecan crunch cake. Combine 1 can pumpkin, 1 can evaporated milk, 3 eggs, 1 and a half cups sugar, 4 teaspoons pumpkin pie spice and a ½ teaspoon salt in a large bowl and mix. Pour into a 9 and a half by 11 inch pan. Sprinkle a box of dry yellow cake mix over the pumpkin mixture then top with 1 cup chopped pecans. Melt 1 cup of butter and drizzle that over the top and bake at 350 degrees for 50-55 minutes.  Serve with whipped topping.

 

Facts to help you with your Holiday desserts, When making an apple pie, add the required amount of sugar to the apples right after slicing, this prevents them from browning ,,and to keep your apple pie crust from getting too brown, cook the apples in the microwave for 8-10 minutes 1st so they don’t need as much time in the oven, to keep pie crusts from getting soggy, sprinkle the bottom crust with sugar before adding fruit filling or for custard or pumpkin pies pre-bake the crust for 5 minutes.  For a unique and pretty garnish, frost green grapes by dipping a small bunch in slightly beaten egg white then coat with granulated sugar and let them dry.

A few great tips for you to give a try.  For an easy sauce to serve on broccoli just thin some mayonnaise with milk and mix in a little mustard, the flavor is delicious and tangy.  You can revive wilted lettuce and limp celery by soaking it in the refrigerator overnight in water with 2-3 teaspoons of granulated sugar in it, are you doing any ice fishing this year?, try coating any fish with finely crushed onion or garlic flavored potato chips before frying or try some of the new spicy flavored chips that out, and if you have an abundance of paper bags at home, cut them into good sized pieces to drain bacon and other fried foods on, they are very absorbent.

Facts to help you with your Holiday baking, An economical substitute for chopped nuts in a cookie recipe is to use quick cooking oats browned in a bit of butter or margarine instead, Try Placing a paper doily on top of an unfrosted cake and sift confectioners’ sugar onto the doily until all spaces are white, carefully lift off the doily to reveal a pretty snowflake pattern.  A fun way to decorate shortbread cookies is to dip one end into melted chocolate, and to store Christmas cookies as you bake them line a large coffee can with waxed paper, layer the cookies with waxed paper in between and cover and put in the freezer. 

 

A few common cooking mistakes and how to avoid them. Always read the entire recipe before you start cooking, you should taste as you for incase flavor adjustments are needed, it is better to soften butter at room temperature not in a microwave so you don’t over-soften, don’t overcrowd the pan when browning foods, leave room for steam to escape so your food doesn’t get soggy, don’t turn over breaded foods too early when cooking you’ll lose your breading, to prevent sticking pre-heat your pan and let the meat you cook rest at room temperature so the juices distribute more evenly throughout the meat.

 

A few common cooking mistakes and how to avoid them. One of the most common cooking errors is boiling when you should simmer, Simmering means a bubble breaks the surface of the liquid every second or two, anything more than that is boiling. It is very easy to overheat chocolate so the best way to melt it is to go slowly, heat gently and remove from heat before it is fully melted and simply stir until smooth. To ensure foods don’t cook too quickly or slowly put an oven thermometer inside of your oven to ensure correct temperature. You should also use a meat thermometer to ensure proper cooking temperature and avoid under or over-cooked meats. 

 

A few dieting tips for you to try.  Eat a balanced diet combining protein, carbohydrates and healthy fats…don’t underestimate your calorie intake, track it on paper, diet with a buddy to help each other’s motivation, visualize yourself healthy and stay positive, don’t expect a quick fix and dedicate yourself to eating better.  Exercise before a big meal to jump start your metabolism and eat a healthy lighter first course a salad with low calories and fat will help you eat less of the other foods.

 

A few dieting tips for you to try.  Start every day out with a healthy breakfast; it is one of the keys to successful weight control.  Don’t focus on the scale, focus on yourself, don’t rely on dietary supplements, instead eat healthy well balanced meals, keep a food  journal and review it to help break bad habits, brush your teeth after every meal to give your mouth a fresh clean feeling and to help deter you from eating anymore. Make sure to take baby steps, don’t try to do too much at once instead  Do smaller more manageable changes and you’ll find them much easier to live with.  

 

Using marinades with beef. Always marinate in the refrigerator, never at room temperature, Marinate in a food-safe plastic bag or in a nonreactive container such as glass or plastic. Turn or stir the beef occasionally for even exposure. Never save and reuse a marinade, and marinade that has been in contact with uncooked meat must be brought to a full rolling boil for at least one minute before it can be used for basting or as a sauce. Marinate tender cuts of beef for 15 minutes to 2 hours and less tender cuts for at least 6 hours but no more than 24hours. Remove beef from marinade and pat dry before cooking and enjoy.

 

How to make beef kabobs at home. All you need are 12 inch skewers, a pound of top sirloin or beef tenderloin steaks an inch thick and cut into 1 and ¼ inch pieces, a package of medium whole mushrooms, a large onion cut into chunks and any color bell pepper cut into 1 inch pieces. You can season all pieces to your own taste. Alternately thread beef and vegetables onto skewers leaving a small space between pieces, place kabobs on rack in broiler pan so surface of beef is 3-4 inches from heat. Broil 9-12 minutes for medium rare to medium, turning once. Kabobs are also great off the grill.

An easy recipe for corned beef and cabbage to try. Ingredients are 3# of corned beef brisket w/ spice packet, 10 small red potatoes, 5 carrots peeled and julienned and 1 large head cabbage, cut into small wedges. Place corned beef in large pot, cover with water, add spice packet and cover to and bring to a boil, then reduce to a simmer. Simmer for 50 minutes per pound or until tender then add the whole potatoes and carrots and cook until almost tender. The last step is to add the cabbage and cook for 15 minutes more. Slice the meat across the grain and enjoy.

 

An easy 4 ingredient recipe for spiced pecans, a delicious appetizer or snack that everyone is certain to love. All you need is two cups of shelled pecan halves, ½ cup of brown sugar, 2 tablespoons Cajun spice mix and 4 tablespoons of butter. Put the brown sugar, spice and butter in a small saucepan. Cook over low heat, stirring, until the butter and sugar are melted together. Pour into a bowl with the pecans and mix until coated well.  Spread the nuts on a baking sheet and bake at 325 degrees for 20-25 minutes, until the coating is caramelized and browned. Serve at room temperature.

 

A few food safety tips for your kitchen.  Your refrigerator should always be 41 degrees or colder, hot foods should be refrigerated as soon as possible within 2 hours or you shouldn’t keep them, Counters and cutting boards should be cleaned with hot soap and water and sanitized with a bleach solution or commercial sanitizer, don’t forget to sanitize your drains and disposals periodically also.  When washing dishes by hand don’t let them sit too long in the water, wash with soap and let them air dry.  Do not thaw meat, poultry and fish products at room temperature unless in cold water, the best method is to let meat thaw overnight in your refrigerator.

 

An easy ham recipe for you to try. Ingredients are one 6-8 lb half bone-in ham, 1 teaspoon whole cloves, ¾ cup brown sugar, ¾ cup orange marmalade and ½ cup Dijon mustard. In a small bowl, combine the brown sugar, marmalade and mustard; set aside. Score the surface of the ham, making diamond shapes 1/2 in. deep; insert a whole clove in the center of each diamond. Place ham cut side down on a rack in a shallow roasting pan. Bake uncovered at 325° for 2 hours or until a meat thermometer reads 140°. Brush the ham with the glaze and bake 45 minutes longer, brushing with glaze every 15 minutes. Slice and serve with remaining glaze.

 

A few quick and easy appetizers that you can put together in a hurry. Combine ketchup and brown sugar to taste, add cocktail sausages or slices of hot dogs and heat in a slow cooker and serve. Spread cream cheese on a large plate or cookie sheet, top with cocktail sauce and sprinkle imitation crab flakes or small shrimp over top and serve with crackers or spread cream cheese combined with dill weed on cocktail rye slices, top each with a cucumber slice and sprinkle lightly with dill weed. For a quick party snack spread paper thin slices of ham with cream cheese and wrap around a pickle or green onions, Slice and serve.

Remove both ends and the label from an empty tuna can to make the perfect mold for poached eggs.  Don’t throw away worn table cloths, instead, make a variety of dishtowels and napkins from them. Next time you are hard cooking eggs, add a few drops of vinegar to the water, it will help keep the shells from cracking, and did you know it’s easy to get a single coffee filter out of the stack if you turn the stack inside out.  You can also re-use your brown paper grocery sack, soak the entire bag in water, put your hard bread or rolls in the wet sack and place in your oven heated just to warm. Watch for the bag to dry out, it will only take minutes and remove; you will have fresh soft rolls or bread again.

 

A few quick and easy appetizers that you can make for your party. Precook bacon and wrap around a water chestnut, secure with a toothpick, put in a baking dish, cover with bbq sauce and bake until the bacon is crispy.  Pick up some Genoa salami slices, spread cream cheese on one side and sprinkle with garlic powder then put the end of a breadstick in it and wrap the salami around it. To make the perfect sauce for meatballs, chicken wings or wieners just combine equal parts or 1 cup grape jelly and 1 cup BBQ sauce, heat to melt jelly and stir. 

 

A few quick and easy Beverage recipes for you to try. For easy hot buttered Rum combine 1 ½ ounces dark rum, 1 teaspoon brown sugar and 1 teaspoon butter in a mug, add hot water or milk and top with nutmeg. For a super easy holiday punch just mix together 1 can each of apple juice , orange juice and pineapple juice concentrates, One 2 liter of ginger ale and a 750 ml of Vodka, in the mood for brandy slush? Just boil 2 cups of water, steep 4 tea bags in it then dissolve 2 cups of sugar in that, add 1 can each of orange juice and lemonade concentrate, 7 more cups of water and 2 cups of brandy mix well and freeze.

 

A few quick and easy appetizers that you can put together in a hurry. Make a pretty pizza dip by spreading cream cheese on a plate and topping with pizza sauce, add your toppings of choice then top with mozzarella cheese and serve with crackers.  Canned biscuits make easy appetizers, you can flatten them for mini pizza crusts, wrap them around wieners for pigs in a blanket, or make cheesy snack crackers by adding  some shredded cheddar to the dough, rolling it thin and cutting it into small squares.  Just bake until crisp.  And for a healthy alternative you can make Christmas bells by placing a maraschino cherry at the base of a pear half.

Use these marinated vegetables with pasta, salads or canned tuna. To save time never grate cheese for just one meal, grate extra and store in refrigerator or freezer, you can also chop extra onions, peppers or other vegetables to store for future use.  Be ready for the whole week and wash and dry all the fresh herbs and lettuce you’ll need at once, simply wrap with a damp paper towel and refrigerate in a sealed plastic bag.

A couple quick and easy recipes for you to try for your party.  It only takes 5 minutes to prepare buffalo chicken drumsticks, mix  2/3 cup of hot sauce and a tablespoon of oil together and brush ½ the sauce onto 8 drumsticks, bake at 450 degrees for 15 minutes, turn them over and brush with remaining sauce. Bake for 15 more minutes and serve with a dipping sauce.  You can make easy pizza dippers by thawing and rising a loaf of frozen bread dough, stretch it to cover a greased cookie sheet, fill down the middle with the pizza meat, veggies and cheese of your choice,  fold up into a pocket and pinch shut and bake at 370 degrees for 25 minutes, slice and dip in pizza sauce.

Add some cream cheese to your salsa and serve with tortilla chips, Mix 2 cups sour cream with one envelope of dry onion soup mix and ¾ cup cheddar cheese for a delicious cheddar onion dip. For a quick chili cheese dip combine a can of chili, a package of cream cheese and a cup of cheddar cheese and heat until melted, serve with corn chips. For a delicious and simple spinach dip combine 1 pkg thawed chopped spinach, 1 packet knorr vegetable soup mix and a teaspoon of dry onion soup mix or onion flakes and serve with Hawaiian bread.

Fish is easy to bake, just put in a greased shallow baking dish, skin side down, season the top of the fillet and bake at 425-450 degrees for about 10 minutes per inch of thickness. When done the fillet should be opaque, moist and flaky.

Get the best quality of your frozen fish or shellfish by using them within three to six months. When freezing fish at home, wash it under running, cold water and then dry it with paper towel. As general rule, seafood and fish should be served with white wine, however when pairing wine with food you should also consider the seasonings of flavor of your dish. A lightly flavored fish or seafood combines well with a light white wine, like a Sauvignon Blanc or Chardonnay, while dishes with robust flavors, spices and tomatoes such as Mediterranean dishes like a paella) would combine better with a medium bodied red or a lovely rosé. Tuna or salmon which are full flavored fish can be paired with a red wine, especially if they are grilled. Avoid high-tannin red wines when pairing wine with fish or seafood. These wines tend to taste steely if combined with fish or seafood. Therefore avoid pairing Cabernet, Chiantis and full-bodied Merlots and Syrahs.
